Zesty Chicken Soup


What is your favorite soup to cook when You feel sick?  For me, I love to cook chicken soups. My taste buds have been off, so I felt like a little more different Chicken soup. Last time when someone was sick in my house I made a more hearty chicken soup, loaded with tons of veggies. This time I opted for a more subtle but zesty Chicken soup. Something that would waken my taste buds with lime, jalapeno, and peppercorn. 
  • 10 cups of water in stockpot
  • 3 chicken breast with bone
  • 1  zucchini (thinly sliced)
  • tsp of whole peppercorns
  • 1/2 onion (diced)
  • 1  jalapeno pepper (thinly sliced)
  • 4 cloves of garlic (diced)
  • tsp of oregano
  • tsp of kosher salt
  • 4 tablespoons  fresh lime juice
  • serve in individual bowl each bowl 1/4 cup of water crest 2 tablespoons feta
  • cheese topped with cilantro.
In your stock Pot, fill with 8 to 10 cups of water, or Chicken Broth. Place Raw Chicken in stock pot. Toss in dice onion, thinly sliced zucchini, peppercorns, jalapeno, garlic, oregano, and salt.




 Boil for about 20 minutes over medium high heat, or until Chicken is done. 


Carefully remove Chicken form the skillet, and slice off the skin, and take off the bone. Slice, and return to the pot, add lime juice. Simmer for 10 more minutes. Carefully remove peppercorns, if needed. 


In the bowl which you are serving, put 1/4 cup of Watercress in, and pour soup on top. Top with Cilantro and Cheese. 


Serve and enjoy!

Hearty Healthy Chicken Soup

A Chicken soup to savor!


When it is chilly outside, and you have a cold,  there is nothing more soothing than a nice warm bowl of Chicken Soup. For generations chicken soup has been said to assist the body in the healing process. For years I wondered if this was a myth told by my grandmother or a fact. Does chicken soup heal the body and soul?

According to a study done by University of Nebraska Medical Center, it does heal the body. Chicken noodle soup has anti-inflammatory properties, Neutrophil, that when activated may sooth that sore throat and assist in taking away some of the common miseries that are associated with cold and flu symptoms. 

The vegetables are an amazing source of vitamins and antioxidants! This soup has added sweet potato to replace the noodles, which adds vitamin A, vitamin C, and potassium to this dish. Carrots and zucchini, which again gives the body a boost of vitamin A , and also provides cardio-protective benefits. All beneficial when you are feeling ill. 

Ingredients

  • zucchini 
  • 8 medium carrots 
  • 2 chicken breast (vegetarians leave out!)
  • 2 (32oz) of low sodium Chicken broth (vegetable broth, or water)
  • 1 cup of onion
  • 2 medium sweet potatoes
  • 16 small vine tomato
  • Organic All Spice
  • Olive Oil
  • Sea Salt and pepper
  • 16 ounces of water
Step One.
Rinse and pat chicken, slice thinly and season with salt and pepper. Slice tomatoes, thinly, line the bottom of a baking dish with tomatoes and olive oil, layer chicken on top, and top with remainder of tomatoes.  Top with a tablespoon of olive oil. Bake at 275 for 1 hour and 45 minutes.
Slow roasted chicken and tomatoes for the soup


Step Two.
Pour broth and water into a stock pot. Add sliced vegetables, chicken, tomatoes, and spices. Bring to a slow boil over medium high for 15 minutes, and then simmer until vegetables are tender. 
Antioxidants!

Fajitas on Mexican pancake

Happy cinco de mayo!
She loves her meat and peppers!

For those of us that love eating Mexican and miss the tortilla's used here is an Paleo alternative!



  • 1 pound of flank steak
  • (2) 6 ounce chicken breast
  • 1 lime
  • 1 teaspoon of Chili powder
  • 1 teaspoon of dried oregano
  • salt and pepper
  • 1 teaspoon of granulated garlic
  • 1 tablespoon of olive oil
  • 2 small onions 
  • 2 teaspoons of cumin
  • 3 bell peppers
  • 1 tomato deseeded and diced
  • fresh cilantro to taste!
In a small bowl mix Chili Powder, Oregano, salt and pepper, granulated garlic, and cumin together. Line a baking dish with foil, and drizzle some olive oil on the bottom. Place sliced onion, tomato and bell peppers in the baking dish on the bottom. Rub your flank steak and chicken with all spices, and lay on top of vegetable mix. Drizzle with  olive oil, and squeeze a whole lime on the chicken and steak. Broil for 20 minutes or grill!


Mexican Pancake



  • 1/4 cup Coconut flour
  • 1/4 teaspoon of Kosher salt
  • 1 teaspoon of cumin
  • 2 packets of trivia
  • 1/4 teaspoon of chili powder
  • 1/4 teaspoon of oregano
  • 1 tablespoon of olive oil
  • 6 eggs

Mix eggs and olive oil in a bowl with a high speed hand held blender. In a separate bowl mix all dry ingredients, and then combine.
Pour mix in a skillet by 1/4 cup measurements. On medium heat cook until golden on both sides.

Midwest soul food Fried Chicken




Lets talk FRIED CHICKEN, because I know that Keith ( My husbands co- worker) would!!!! It must be the Midwest Kansas girl in me, but I still love me some fried chicken, Okra, sweet potatoes, and blueberry pie! When my husband started eating no grains and wanted to incorporate the philosophy and eating style with our girls, I found it hard and difficult at times to find innovative ways to make food that they would enjoy and eat.

Lets face it, eating healthy is hard, and and no grain diet can be tricky at times. We all get the occasional craving for foods, which is what happened with me. I wanted Fried Chicken, and instead of making the drive out to ScreenDoor for some southern cuisine, we made best with what we had! And it turned out amazingly delicious too!




  • 1/4 cayenne
  • 1/2 tsp garlic powder
  • 1 tsp sea salt
  • 1/2 tsp granulated onion
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp pepper
  • 1 tsp poultry seasoning blend
  • 2 eggs
  • 4 Chicken Breast

Wash clean and pat dry chicken,  at this time you may slice if you are craving Chicken strips. Next, mix all dry ingredients in a bowl. Mix your eggs in a bowl, and coat chicken in the egg. Drip over the egg bowl for a second and then coat with the spice coating on both sides. 

For healthiest alternative cook in oven at 450, in a baking dish lined with foil and greased with olive oil.

OR, Fry that chicken, in a skillet. I used about 1/4  to 1/2 cup of olive oil. 

when done squeeze lemon on top.

Seasoned Chicken Breast Salad

This salad is an amazingly yummy leftover salad! The Chicken is from my post Seasoned Chicken Breast Salad, that I made the night before!

What you will need: Mix it up, what ever you like, that is healthy!
  • One hand full of Spring mix/ or spinach
  • One sliced Mushroom
  • Grape Tomatoes
  • One tablespoon of Feta ( optional)
  • Homemade dressing of choice!
Then eat and savor the delicious flavors!
