It turns out that Guinness has high antioxidant compounds called flavonoids very similar to red wine, teas and dark chocolate.

I wonder if Chocolate Guinness Bunt cake has a double affect.

We decided to start celebrating St. Patrick's Day, a night early with an Irish traditional dish. My husband rarely eats slowly, but he savored every bite and was the last one to finish the meal. At the end he told me that I had topped myself..... I am taking that is a compliment, and may have to add this into our winter and spring menu once a month!
To keep it healthy, I switched out baby potatoes and used 1 large sweet potato in its place. 

Corned Beef and Cabbage





  • 2 1/2 pounds corned beef brisket (pre- spiced)
  • 1 sweet potato 
  • 1 8 ounce package of baby carrots
  • 1 medium head cabbage
  • 5 to 6 cups of water
  • 2 tablespoons of olive oil

In a dutch oven spread olive oil over the bottom, and place corned beef and 2 cups of water. Bring to a boil and simmer covered for 45 minutes. While cooking dice sweet potato, and slice cabbage into small wedges.


Remove Corned Beef and place on a platter and slice.

Add 4 more cups of water and potato, and carrots and simmer for 15 minutes or until tender, and then add cabbage.

Remove vegetables once cooked and add desired amount of broth

Dish up and serve with almond bread, and Guinness extra stout, enjoy and relish in delight.

Primal Hamburger

What is not to love about a great hamburger every once in a while! And a guilt free no bun one!
While I was on our trip in California, I ordered a Hamburger with no bun and this is what they served me!

Since then I have been making lettuce buns out of everything form salmon sandwiches to egg and bacon sandwiches!

  • 1 pound of ground organic Kobe Beef
  • 1 1/2 teaspoon of sea salt and pepper each

Mix and form into patties on wax paper. Grill or fry in a pan until well done!

Serve with Soul food Sweet Potato Fries.

Soul food Sweet Potato French Fries





Last night I made some delicious sweet potato fries to accompany my Salmon Burger. Now even tho, Sweet Potatoes are not found on the Paleo diet, there are a lot of nutrients in them. Research has found that sweet potatoes are healthier for you when you peel the skin off.   Sweet Potatoes have a high source of dietary fiber, beta carotene, Vitamins C, and B6. When picking out a sweet potato, always go with the orange colored potatoes over the flesh. It is important to know that sweet potatoes are different from other potatoes, in that they lake saponins and lectins, which are known to increase you intestinal permeability. It is important to be cautious if you are watching your glycemic index and weight not to eat too much.


My family of four split on huge sweet potato, and we were all content and full afterward!


Soul food Sweet Potato French Fries




1 tablespoon of Brown Sugar or agave
1 teaspoon of black pepper
1/2 cup of olive oil
1 teaspoon of sea salt
1 sweet potato


Peel and slice your sweet potato.


Mix all of the rest of the ingredients in a bowl.


Take a baking sheet and line with foil. Add about 1 teaspoon of Olive oil to sheet to grease. Place sweet potatoes in a large bowl with mixture and toss. 




Bake at 350 degrees for 20 to 45 minutes. Until soft, and that will all depend on how thinly the potatoes are sliced.




Serve and enjoy!!!!!

For the love of Chocolate

Chocolate dipped prunes. I know that it does not sound appetizing, but I promise you will eat this treat like candy!

I am going to dip walnuts next time!

1/2 pound of dried prunes or any dried fruit of choice
1/2 a bag of 605 to 70% chocolate

Melt chocolate in a saucepan. 



With a fork dip your choice of dried fruit or dip a nut. Dry on parchment paper. 



When dried fully, store in refrigerator, and keep for a nice fast tasty indulging treat!


Salmon Burger

It has been awhile since I have posted, a dish. We went on a trip to Disneyland, and I have not been cooking as much as I would like too. Tonight I made a Salmon Burger. I wrapped it in Ice Burg lettuce, instead of a bun. While in California, I ordered a hamburger with no bun, and in lettuce is how they sent it! Love the Paleo trend setters!



Here is what you need



Salmon burger


  • 8 ounces of fresh Salmon
  • one orange
  • Lettuce of choice
  • Pepper
  • Salt
  • Homemade Mayonnaise
  • Three cloves of garlic
  • 2 tablespoons of Shallot
  • Thyme sprinkled
  • 1 tablespoon of Cilantro Fresh
  • 2 teaspoons of olive oil

Slice and take skin and de-bone salmon. Place in a food processor and blend.

In a bowl Squeeze two tablespoons of Orange juice and grate 2 teaspoons. Lemon would also be a fantastic alternative!!!!




Mix into your bowl all spices, garlic, herbs, and shallots.



Pour into food processor.

Once salmon is processed, form into patties, and place on a baking sheet lined with foil. Broil for 3 to 5 minutes on each side.



Line plate with two thick slices of layered lettuce, and place salmon burger on lettuce. Add Mayonnaise.



Serve and Enjoy!
