Chocolate and Strawberries

Chocolate, strawberries and Red Wine!

Treat your loved one to Strawberries and Chocolate this Valentines Day. If you desire to have Chocolate covered strawberries, melt 1 cup of Dark Chocolate Chips in a saucepan, and dip Fresh Strawberries in the melted Chocolate, set on Parchment paper and let Dry.

You don't even have to melt the Chocolate! It still has the same effect. :-)

Pizza

This Valentines Day Dinner is for the whole family! Who does not love Pizza. This particular pizza is kid tested and approved! I made two the other night, while my daughter had a friend over. The girls ate it and loved it. The next day we only had two pieces left over, which everyone fought over!



  • 2 cups almond flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 teaspoon oregano
  • 2 teaspoon garlic powder
  • 1 teaspoon basil
  • 2 egg
  • 1/4 cup of Parmesan cheese (or another hard cheese, grate finely)
  • 3 tablespoons olive oil
  • Mozerella Cheese
  • and toppings of choice
  • Tomato sauce of choice

















Directions:

Preheat oven to 350 degrees. Form Pizza on parchment paper.
In a large bowl mix all dry ingredients together.
Then add all the wet ingredients.

Spread the dough in a circle on the parchment paper with a spatula or hands.

Pre-bake the dough in the preheated 350 degree oven for 10-12 minutes until they are golden brown.
Add toppings and bake an additional 5 to 10 minutes until your toppings are cooked through or melted.
Serve and Enjoy this guilt Free Pizza!

For the love of Chocolate

Coconut Flour Brownies


Did you know that Chocolate is a super food? Chocolate has tremendous health benefits that can not be ignored. So Eat up! Eat for your heart, eat for your memory, eat it for your health!

Below is a brownie recipe that I made yesterday. It is not yet perfected, but if I promise I will be making a new and improved batch this week. It was still very delicious. I was not a fan of the Agauve so I may try Applesauce or stick with regular sugar, and would like to replace the olive oil with Grapeseed oil, coconut oil, or Walnut Oil next time!


  • About 1 cup of Olive oil, give or take.
  • 1 cup of Cocoa Powder
  • 12 eggs or equivalent egg substititute. 
  • 1/2 cup of Agauve
  • 1/2 cup of brown sugar
  • 1 tsp of Vanilla extract
  • 1 cup of Coconut Flour ( Lets Do… Organic)
  • hand full of chocolate chips and walnuts if desired.

Pre- heat oven to 350. Whisk eggs and add olive oil, extract, and aguave. Stir, and add Cocoa Powder and coconut flour. Finally add chocolate chips and walnuts!

This was a good brownie mix and was gone in a days time. It is just not my all time best! To me it tasted like a healthy brownie! All in all, this recipe would get 7 starts out of 10. Stay tune for more brownie recipes to follow!
We did have a fun time making the brownies, which is the main reason I cook, and that is to enjoy the experience with my family. Below I included some pictures. Violet even got into the mixing!










A Valentine's Day Salad for Her


Cranberry Balsamic Salmon Salad


















In the Spirit of Valentines Day, I am posting a Tracey Special that I made several weeks back. This dressing is amazing, and you will savor every bite.

This recipe is packed with vitamin goodness! Fresh Cranberries, POM Juice, Olive oil, Avocado, and Spinach.












































  • 1 (8 ounce package) of Cranberries, rinsed
  • 1 Original POM juice you will need 8 ounces
  • 4 (4ounces) of Salmon
  • 1/4 cup of Balsamic
  • 1/2 cup of Olive oil
  • 1 Avocado
  • Feta Cheese
  • Kosher Salt
  • pepper
  • 2 Tablespoons of Agave
In a saucepan heat POM juice, and cranberries, for about 10 minutes, add 2 tablespoons of Agave.
Meanwhile, line a casserole dish with foil and place Chicken in. Season with salt and pepper and coat 1/4 cup of olive oil on the chicken.

Preheat oven to 450, and top Salmon with 1/2 Cranberry mixture. Bake for 20 minutes or until done.

While Salmon is cooking dress your plate with that gorgeous Spring Mix, Slice Avocados, and Mushrooms and set aside.

Measure out 1/4 cup of Balsamic, and mix in a bowl with the rest of the Cranberry mixture and olive oil.

Once Salmon is ready add a piece to the plate, top with some Avocado, Feta Cheese, and Cranberry Dressing.

Sever and Enjoy!!

Cook Salmon to a juicy pink



Bread

This is another Elena Pantry Recipe, adapted. I plan on making more breads, but I wanted to share this one.


















2½ cups blanched almond flour
½ teaspoon celtic sea salt
½ teaspoon baking soda
3 eggs
1 tablespoon sugar
1 tablespoon of honey
½ teaspoon apple cider vinegar

Combine all dry ingredients.
Next in a medium bowl, whisk the eggs, and then add agave and vinegar
Mix both dry and wet together
Scoop batter into a well greased 6.5 x 4 inch loaf pan (this loaf pan may have been discontinued. Stay tuned...)
Bake at 300° for 45-55 minutes or until a knife comes out clean
Cool and serve

My daughters were craving grilled cheese, so we added thin slices of Tillamook Cheese onto the sliced bread and baked in the oven at 300 for 5 minutes until the cheese was melted!





Chocolate Chip Cookies

Chocolate Chip Cookies

















This Chocolate Chip Cookie recipe is slightly adapted from Elana's Pantry. I figured why really mess with perfection, when she has such a great cookie dough recipe!

3 cups blanched almond flour
½ teaspoon celtic sea salt
½ teaspoon baking soda
½ cup grapeseed oil
1 tablespoon vanilla extract
½ cup yacon syrup/  or agave nectar.. (or you may use 1/2 cup of sugar)
2 tablespoons of Applesauce
1 cup dark chocolate chips 73% cacao

Mix all the dry ingredients in a bowl. And mix all the wet ingredients, then mix all together in a large bowl.
Place cookies on Parchment paper and Bake at 350° for 7-10 minutes


















This is an amazing recipe, and my girls love to eat just the dough. Because of this we learned to make a double batch! What I love most is there is no eggs in this recipe, so there are no fears of letting my girls eat the dough.

Just a Tease!

My Almond Flour came, and is almost gone! I have been a cooking machine, making recipes, and adapting to our likes! This week we have made everything from No Guilt Pizza, to No Gluttony Guilt Honey Bread, Chocolate Chip Cookies and more! Here is a sneak peak of what will be posted later this week! Oh, and it all tasted very delicious! So much that there is nothing left from what I had cooked, and baked! It is pleasing for me to finally find a replacement for my high carb flours, and exchange it for a low carb healthy Almond flour! And to not have guilt over eating Pizza or feeding my girls cookies is worth every cent and the time and energy!





Seasoned Chicken Breast Salad

This salad is an amazingly yummy leftover salad! The Chicken is from my post Seasoned Chicken Breast Salad, that I made the night before!

What you will need: Mix it up, what ever you like, that is healthy!
  • One hand full of Spring mix/ or spinach
  • One sliced Mushroom
  • Grape Tomatoes
  • One tablespoon of Feta ( optional)
  • Homemade dressing of choice!
Then eat and savor the delicious flavors!


Seasoned Chicken Breast

This is an easy chicken recipe that I threw together with my spices on hand. It was Tuesday evening and it was my plan to make a healthy fried chicken. When to my surprise we had no Almond Flour, so I improvised.



two teaspoons of each,
  • Paprika
  • Oregano
  • Black pepper
  • Garlic Powder
  • Thyme
  • Granulated Onion
  • a pinch of kosher salt
Put all spices in a small bowl


Next step is line baking dish with aluminum foil, spray with oil, or coat, and rub spices on the chicken. Bake at 400, for 20 minutes to 40 minutes, until done, and there is no pink juices when you cut into the chicken!



A gadget that I love

One of my new gadgets this month for healthy cooking is Sur la table's Oil Mister! This mister, allows my to use my own tasty olive oil, without having to measure it out every time I make eggs, or need to spray my pan. It cuts out a lot of needless calories, and beats the Pam sprays any day!


The Goodness of a Lemon

  • Citric acid is a known as a natural preservative, and aids digestion. The citric acid in a lemon can help dissolve kidney stones.

  • Lemons, has almost 90% of the daily recommend amount of vitamin-C . Which is amazing for the immune system and fighting free radicals.

  • Lemons have phytochemicals.

  • Lemons have a small level of vitamin A, and other flavonoid anti-oxidants such as α and ß-carotenes, beta-cryptoxanthin, zea-xanthin and lutein. Which are all known for being antioxidants. Vitamin A is known to maintain healthy skin and be great for the eyes. Flavonoids help also protect against lung and oral cancers.

  • Lemons are a good source of B-complex. And contain healthy amount of minerals like iron, copper, potassium and calcium. Potassium in an important component of cell and body fluids helps control heart rate and blood pressure.

    Lemons may also reduce your risk for cancers, arthritis, and obesity and coronary heart diseases.

The Primitive Foodie Blog

Welcome to "The Primitive Foodie Blog". As an Educational cooking blog, it is our goal to teach valuable nutrition education, while having fun cooking and playing with many recipes.

Our diet is a Paleo Hybrid diet. We follow, or have tried to follow the Paleo diet, but have failed miserably. WE love our breads, pizza, cookies, brownies, and many of the foods that are not good for our health or our waist lines. I am not ready to diet and give up the foods that I love, but I am ready to make changes to adapting how they are prepared.

Each of my recipes are fun, and ones that your whole family will enjoy, as will you. The blog will be color coated for specific diets. Whether you are a Vegetarian, Lactose intolerant, or glucose intolerant, each of these recipes are adaptable.

  • Vegan (versions will be written in Green)
  • Dairy Free ( in Red)
  • Glucose Free ( in orange)
You may also decide that you want to try to adapt these recipes your own diet. Which is why all these recipes are highly interchangeable. We are all different, and not one diet will work for everyone all the time. Our family has a diet consist of a lot of nut products, whereas many may not.

On a personal note;

It is also my number one goal is to share my expertise and love that I have for cooking, to share my knowledge of food, and nutrition, in this blog. This is also a journey that I myself am embarking on, to learn how to live a nutritious lifestyle, to share a healthy attitude toward food with my three beautiful daughters, and to become more comfortable with who I am at any size. To remind myself that it is about nutrition, balanced exercise, meditation, and most importantly sleep. Which will all be discussions that you can find under Personal Journey, and 50 reasons.
